A native of New Mexico, Thomas Brewington graduated from Scottsdale Culinary Institute at the top of his class. Following graduation, he traveled extensively throughout Asia, picking up new techniques to incorporate in his cooking. He landed back in his home state as the Executive Sous Chef for Rebecca’s at The Lodge.
Chef Brewington has displayed his exceptional talents in some of Scottsdale’s finest dining establishments since moving back here seven years ago. He worked under Chef Christopher Gross at Hops, followed by an extended stay at Sushi Brokers. He finally found his home in 2000 with the opening of Barcelona Chandler. After Barcelona Scottsdale opened in 2001, Thomas transferred in as Executive Sous chef and was promoted to Executive Chef in March 2004.
Thomas has enjoyed great success with Barcelona, earning such awards as 2nd place in Best Chef of the West, Best Fine Dining Top Prop Award, Best Business Munch Top Prop Award and Best location for Group Events Top Prop Award, as well as landing the cover story in Sonik Magazine in February 2005.
While Thomas loves to cook refined New American cuisine for others, his favorite meal for himself has and always will be the food he grew up loving, New Mexican cuisine.
