Chef Benito Mellino

Chef Benito MellinoBenito Mellino’s culinary globe trotting has spanned the continent of Europe to the beaches of the Bahamas. Italian-born, Mellino came to Arizona in 1974 as one of the founders of the Avanti Restaurant Group.  His vision at the time was to introduce globally inspired cuisine to a city best known for chuck wagon supper clubs and taco stands.

With the opening of Avanti Restaurant in Phoenix, Scottsdale followed along with restaurants in California.  Mellino was one of the first restaurant owners to segue into the concept of catering services: providing food and beverage off premise.

Throughout his career, his food philosophy has remained authentic to his Italian roots and he considers himself a ‘purist’. “Regardless of what you cook always use the freshest ingredients available and keep it simple.  Styles like Nouvelle cuisine look nice but that’s not enough, I like food that fills your belly and touches your soul.”

Currently, Mellino has expanded his culinary interest to include the study of wine making, hosting several wine makers from abroad, visiting wineries and has introduced quarterly wine maker dinners at the restaurant.

Avanti is a testimate to his philosophy and hard work celebrating over 30 years in the Valley.
